Bring 1 cup salted water to a boil in a #medium pot{}. Once boiling, add @jasmine rice{1%cup}. Cover and reduce heat to low. Simmer until tender ~{15%minutes}. Remove from heat and keep covered until ready to serve.

Wash and dry all produce. Prepare @brussels sprouts{8%oz}(trimmed and quartered lengthwise), @carrots{1%lb}(peeled and thinly sliced on a diagonal), @scallions{4%unit}(thinly sliced, whites and greens separated), @jalapeño{1%unit}(thinly sliced, ribs and seeds removed if desired), and @ginger{1%inch}(peeled and minced). Halve @lemon{1%unit}.

Heat a drizzle of @olive oil{1%tbsp} in a #large pan{} over medium-high heat. Season @beef sirloin tips{12%oz} on all sides with @salt{1%tsp} and @black pepper{½%tsp}. Sear until browned ~{1%minutes} per side. Remove from pan and set aside.

Add brussels sprouts, carrots, and as much jalapeño as you like to same pan. Toss until veggies are just barely tender ~{5%minutes}.

Finish the stir-fry: Add scallion whites and ginger. Toss until veggies are softened ~{3%minutes}. Add @soy sauce{3%tbsp}, steak, and a squeeze of lemon. Toss until steak is cooked to desired doneness ~{2%minutes}.

Serve: Fluff rice with a #fork{}. Serve stir-fry on a bed of rice, top with scallion greens, and enjoy!
